Many people think this is automatically healthier and more appropriate. Some even self-diagnose and decide to completely give up bread, pastries, or sweets. But is this really always necessary?

Gluten: friend or foe?

Gluten is a protein found in wheat, rye, and barley. It gives dough elasticity, bread softness and airiness, and biscuits fluffiness.

In fact, gluten is only contraindicated for those with serious medical conditions: celiac disease, wheat allergy, or confirmed intolerance. For others, gluten-containing products can be very beneficial: grains contain fiber, B vitamins, and minerals. Simply excluding them can deprive you of essential nutrients and worsen your diet.

So unless you have a doctor's diagnosis, eliminating gluten just for the sake of fashion doesn't make much sense.

Sugar: The Sweet Truth

Sugar is a completely different matter. It's not the most "natural" product for the body and shouldn't be consumed in large quantities. In Europe and Spain, the trend to reduce the amount of sugar in desserts, especially for children's desserts, is gaining ground. Parents often opt for "less sweet" or sugar-free options.

But there's one caveat: in baking, sugar isn't just sweet. It retains moisture, helps dough rise, browns the crust, and softens the cake. It's not always possible to completely eliminate sugar and replace it with something else, as the cake may become dry or lose its usual flavor.

Furthermore, not all substitutes are equally good: some don't break down in the body and end up completely in the intestine, causing discomfort. Therefore, it's important to choose safe options.

What substitutions do we use?

We've found a balance in our bakery. For those who prefer less sugar, we use erythritol and stevia; they're considered safe in Spain and readily available in stores.

Erythritol is sweet, but has virtually no calories and doesn't affect blood sugar levels. Stevia is a natural plant-based sweetener with an intense flavor that blends well with other ingredients.

We also love using fruit. Bananas, carrots, or ripe apples are ideal for adding a touch of natural sweetness and making the cake not only delicious but also healthier.

Our cakes are sugar-free and low in sugar.
