Super Cookies at Pastelería Tulipaneta

Lotus Cream CookiesHello! I am Irina, a professional pastry chef from our bakery, Pastelería Tulipaneta, located in Barcelona. Today, I will tell you about our Super Cookies, which have become a true dessert sensation. These large, crumbly cookies with rich fillings win hearts thanks to their unique flavor and texture. Let’s explore what they are and the best ways to serve them to truly enjoy them!

What are Super Cookies?

Super Cookies are not just cookies but a complete dessert in the form of a large galette (8–12 cm in diameter). A soft base with a crispy crust hides a creamy or fruity filling inside, topped with icing, crumbs, or nuts. This combination of an American cookie and a European tart offers a sweet yet not overly rich taste, with a texture that melts in your mouth. Unlike the typical small, dry cookies, this is a substantial portion for indulgence, perfect to share or enjoy alone. They have become a hit among those seeking an "American vibe" in Barcelona.

Why have large filled cookies become so popular?

Because they look like they belong on Instagram, yet taste homemade and authentic. Moreover, similar cookies have gained massive popularity on TikTok. People love that they are simultaneously:

  • Eye-catching and beautiful (ideal for a gift or a coffee break),
  • Filling,
  • And maintain a "handmade" character — not an industrial dessert.

What flavors do Super Cookies come in?

Butter cookiesWe offer a variety of flavors, inspired in part by local Catalan traditions, as it’s well-known that Catalans have a deep love for all things chocolate:

  • Chocolate Nutella: An intense chocolate base with crunchy nuts and milk chocolate chunks for aroma and texture. In the center, a generous portion of creamy Nutella.
  • Dark Chocolate: A deep chocolate base with dark chocolate chunks and nuts for a crispy texture. In the center, a dark chocolate ganache for a rich flavor.
  • Blueberry Almond: A soft vanilla base with milk chocolate chunks and almonds for a balanced taste. In the center, a blueberry filling for freshness.
  • Lotus: An aromatic vanilla base with milk chocolate chunks and Lotus biscuit crumbs for caramel notes. In the center, a creamy Lotus paste.
  • Pistachio Raspberry: A delicate vanilla base with white chocolate chunks and pistachios. In the center, a raspberry filling for a vibrant taste.
  • Peanut: A vanilla base with crunchy peanuts and milk chocolate chunks. In the center, a peanut cream ganache.
  • Marshmallow: A vanilla base with marshmallows, berries, and chocolate for variety. In the center, a large marshmallow for a fluffy touch.
  • Strawberry: A vanilla base with white chocolate, strawberries, and marshmallows. In the center, a strawberry ganache.
  • Coconut: A vanilla base with white chocolate, almonds, coconut flakes, and almond crumble. In the center, a coconut ganache for an exotic flavor.

The menu changes to keep surprising you — start with the chocolate one, it’s versatile!

What are the best ways to serve Super Cookies?

Super Cookies are a dessert that shines with the right companions!

  • Coffee: Espresso or latte softens the sweetness and highlights chocolate notes.
  • Tea: Green or lemon tea pairs perfectly with fruity flavors like raspberry or strawberry.
  • Ice Cream: Vanilla ice cream turns the cookie into a "sandwich" — try it with coconut or marshmallow.
  • Wine: A glass of muscatel (sweet Catalan wine) adds elegance, especially with Lotus or Dark Chocolate cookies. Serve at room temperature to keep the crispy crust perfect — this enhances the flavor!

Can Super Cookies be bought without sugar / without gluten / vegan?

This is one of the most common requests in Barcelona, where everyone cares about health. We offer these options upon request:

  • Without sugar: Made with stevia or erythritol and natural sweeteners — the taste remains, and the texture is the same.
  • Without gluten: Dough made with almond, coconut, or rice flour.
  • Without lactose: Made with lactose-free butter, suitable for all. Order in advance via WhatsApp, and we’ll tailor it to your diet!

How to store Super Cookies and how long do they last?

It’s best to store them in the refrigerator in a closed container to prevent absorbing odors, then simply warm the cookie for 10 seconds in the microwave. In Barcelona, with our humidity, they can be kept in a box for a couple of days — they don’t stale quickly. Don’t leave them in the sun: chocolate melts!

Can Super Cookies be frozen?

Of course, and it’s an ideal dessert for large families! Freeze whole: place in a freezer bag for 1–2 months. Thaw at room temperature for 1–2 hours, then warm in the microwave for 10-15 seconds — the texture will return to fresh. Don’t freeze glazed ones — they may crack. Perfect for "stocking up" for holidays!

Sweets and natural fruitsNowadays, you can see dozens of "gluten-free" and "sugar-free" recipes on TikTok, Instagram, and various blogs. Many people think this is automatically healthier and more appropriate. Some even self-diagnose and decide to completely give up bread, pastries, or sweets. But is this really always necessary?

Gluten: friend or foe?

Gluten is a protein found in wheat, rye, and barley. It gives dough elasticity, bread softness and airiness, and biscuits fluffiness.

In fact, gluten is only contraindicated for those with serious medical conditions: celiac disease, wheat allergy, or confirmed intolerance. For others, gluten-containing products can be very beneficial: grains contain fiber, B vitamins, and minerals. Simply excluding them can deprive you of essential nutrients and worsen your diet.

So unless you have a doctor's diagnosis, eliminating gluten just for the sake of fashion doesn't make much sense.

Sugar: The Sweet Truth

Sugar is a completely different matter. It's not the most "natural" product for the body and shouldn't be consumed in large quantities. In Europe and Spain, the trend to reduce the amount of sugar in desserts, especially for children's desserts, is gaining ground. Parents often opt for "less sweet" or sugar-free options.

But there's one caveat: in baking, sugar isn't just sweet. It retains moisture, helps dough rise, browns the crust, and softens the cake. It's not always possible to completely eliminate sugar and replace it with something else, as the cake may become dry or lose its usual flavor.

Furthermore, not all substitutes are equally good: some don't break down in the body and end up completely in the intestine, causing discomfort. Therefore, it's important to choose safe options.

What substitutions do we use?

We've found a balance in our bakery. For those who prefer less sugar, we use erythritol and stevia; they're considered safe in Spain and readily available in stores.

Erythritol is sweet, but has virtually no calories and doesn't affect blood sugar levels. Stevia is a natural plant-based sweetener with an intense flavor that blends well with other ingredients.

We also love using fruit. Bananas, carrots, or ripe apples are ideal for adding a touch of natural sweetness and making the cake not only delicious but also healthier.

Our cakes are sugar-free and low in sugar.

We tried different recipes and have already found our favorites.
- Sugar-free banana cake: only the fruit provides sweetness. Kids love it. - Carrot cake with a little erythritol: tender and slightly sweet on its own.
- Aromatic pumpkin pie with prunes and honey without sugar.

Souffle cakeBird's Milk Cake: a tenderness that pleases the soul

Imagine: an airy soufflé that melts in your mouth, a thin sponge cake, chocolate glaze with leaks and fresh berries on top. This is a bird's milk — dessert cake that has been familiar to many since childhood, but in our modern confectionery in Barcelona it has received a new life.

Where did he come from?

The story of the Bird's Milk cake — is a true culinary legend, and the main character of this story is a pastry chef Anna Chulkova.

How it all started

The idea for the dessert did not come from scratch. Back in the 1930s, candies called "Bird's Milk" (polsk appeared in Poland. Ptasie Mleczko). Their name was inspired by the ancient myth of "bird's milk" — by something rare, unattainable and incredibly desirable. These candies were very popular.

But a real breakthrough occurred in the 1960s, when Anna Chulkova, a confectioner at the Prague restaurant, decided to create a cake based on these sweets. She wanted to do something unusual, airy and memorable.

The secret of success

The main feature of the cake has become souffle. Anna Chulkova used agar-agar (geling agent from algae) instead of gelatin, which gave the dessert a unique — texture that was tender, airy and at the same time stable. The soufflé was so light that it literally melted in my mouth like "bird’s milk".

The cake consisted of three layers:

  1. Biscuit — is thin, delicate, like a base.

  2. Souffle — airy, with light sweetness.

  3. Chocolate glaze — to complete the taste.

Bird's Milk Cake quickly became a hit. Anna Chulkova not only copied Polish candies — she created something unique. Her cake became a dream come true: tender, airy, a little magical. And even now, decades later, "Bird's Milk" remains one of the most beloved desserts.

Yes, this cake is a legend. We invite you to try this legend in its modern version. The title sounds like something magical, right? "Bird's milk" — is about something unattainable and very desirable. And we at our confectionery decided that everyone who loves sweets should have this dessert.

How do we do it?

Our cake — is a real miracle:

  • Biscuit — is thin, as gentle as a cloud.

  • Souffle — vanilla, airy, melting in mouth.

  • Chocolate glaze — with cocoa and beautiful leaks.

  • Fresh berries — for brightness and light sourness.

And we also have "Bird's Milk" candies with different flavors:

  • Classic vanilla — for those who love tradition.

  • Pistachio — with a light nutty aroma.

  • Raspberry — with a bright berry note.

You can buy one taste or put together a — set to try everything at once.

Why is it so tasty?

There is no explanation for this fact, it’s delicious and that’s it. This cake has a very simple sponge cake, the tenderness of the soufflé is explained by whipped proteins with the addition of condensed milk and butter, the agar-agar thickener affects the texture and taste, but it is the combination of everything that is important: and the sponge cake, both soufflé and cocoa, and the berries simply set off the taste. Addictive, especially candy. I want them all the time. If you try once, you will then buy all the time.

Just imagine: you walk into our pastry shop in Barcelona and it smells like fresh biscuit, vanilla and chocolate. On the — table is our "Bird's Milk" cake with berries and chocolate leaks. Nearby are — boxes of sweets: vanilla, pistachio, raspberry. You try one piece and... that's it, you fall in love.

We don't just make desserts — we create emotions. Our "Bird's Milk" — is not just a cake, it is a masterpiece. A taste that evokes delight, modern, with a twist.

We're not saying we're the best. We just do what we love and share it with you. Our — cake is for those who value tenderness and quality. — candies for those who like to try something new, but are not ready to give up the classics.

So if you haven't tried our Bird's Milk yet, that's your sign: it's time. It's not just a dessert, it's a little fun that makes the day brighter.

Come in, treat yourself or take — with you to share this taste with someone important.

Japanese mochiMochi: The Little Japanese Joys That Conquer Hearts

So let's talk about moti. I often ask people, "Do you like mochi?" And do you know what's surprising? Many people answer that no. But I'm sure they just didn't try our moti. Because our mochi — is not just a dessert, it is a culinary masterpiece.

What is mochi?

Mochi — is a traditional Japanese dessert that consists of tender rice dough and filling. In Japan, they are made with a variety of fillings, sometimes even (azuki) beans, but frankly, this may be too specific for European taste. Therefore, we decided to adapt the mochi so that they become closer and clearer to those who grew up on European desserts.

Are our mochi special?

Let's take a point by point what makes our mochi so unique:

1. Dough

Dough for mochi — is a different story. We use (da glutinous rice flour, the packaging says "glutinose", but it's not gluten, but just the property of flour being sticky and elastic). We brew it in a special way so that it turns out viscous, tender and slightly sweet. Personally, what I like most about mochi is the dough — its texture and taste are mesmerizing.

2. Filling

We do double moti. What does this mean? Within each mochi there are two layers of filling:

  • Fruit center — fresh, bright, based on fruit or berry puree.

  • Main filling — it can be mousse on mascarpone, with the addition of fruits, nuts, coffee or caramel.

It turns out that mochi — is like a small mousse cake wrapped in rice dough.

3. Assortment

Moty dessertEnter our category with mochi and you will see how many different flavors we have! From classic (strawberries, mango) to more unusual ( pistachio, caramel, coffee). I always recommend starting with a set that contains different flavors. This way you can understand what is closer to you, and perhaps discover your new favorite dessert.

Moti for children: joy in every face

Mochi foodAnd now the most interesting thing! I deliberately got confused and created a collection children's moti with faces are animals. Imagine: cute mochi in the shape of a dog, a cat, a cow and other animals — only 9 different figures! This is not just a dessert, it is a real joy for children. Every mochi — is a small surprise that brings a smile and delight.

Children's mochi are as tasty as regular ones, but with an additional — bonus they are beautiful and funny. Ideal for holidays, children's parties or just to please kids with something special.

Does everyone like moti?

To be honest, mochi — is not a dessert that suits absolutely everyone. Approximately 20% of people say they don't like him. Perhaps it's the texture of the dough or that they're just not used to desserts like this. But if you like to try new things, if you like tender, airy and slightly exotic sweets, then mochi — is definitely your option.

Small sweet rice balls

We adapted the traditional Japanese dessert to suit European taste, while maintaining its uniqueness. Our mochi — is not just sweetness, it is a small journey into the world of new flavors and textures.

Advice from me

Green mochi tea If you haven't tried mochi yet, start by dialing. It's like a box of surprises: every mochi — has a new taste, new emotions. And if you are already familiar with this dessert, but have not yet found "your" taste, visit us. I'm sure you'll find something that will win your heart ( and taste buds).

Mochi — is not just a dessert. This is a little joy that you can give to yourself or your loved ones. Try it and maybe you'll be part of the 80% who adore them!

The story of how marshmallow tulips connected two hearts

Bouquet of sweetsIn Barcelona, where the sun kisses the sea and the streets are filled with the aromas of coffee and fresh pastries, lived a young man named Mark. He was humble, a little shy, but with a big heart. Every day he saw her — Alice, an unapproachable beauty with brown hair and a smile that drove him crazy.

Alice studied with him at the same faculty. She always seemed so confident, so distant. Mark tried to approach her and speak, but each time the words got stuck in his throat. "What can I offer her? — he thought. — I'm just an ordinary guy, and she... she's like from another planet".

One day, after another unsuccessful attempt to speak to Alice, Mark was walking down the street with his head down. He was so upset that he didn’t even notice how he ended up near our confectionery. The display case, decorated with bright boxes and desserts, attracted his attention. And then he saw them — marshmallow tulips.

Tender, airy, as if made of clouds, they lay in a small box decorated with ribbon. "That's perfect", — thought Mark. He went inside, bought a box and wrote on a small note:

"Waiting for you in Plaza Catalunya at 5 pm. I'll be with a bouquet of tulips. You recognize me right away. Your fan".

The next day, during a break between couples, Mark saw Alice leave the audience. His heart sank wildly. He waited for her to move away and quickly placed a box of marshmallow tulips on her table along with a note.

Alice returned, saw the box and smiled. She opened it, tried the marshmallow tulip and read the note. Her heart trembled.

At 17:00 in Plaza Catalunya, Marc stood with a bouquet of real tulips. He was looking nervously at his watch when he suddenly saw her. Alice walked towards him, holding in her hands that same box with marshmallow tulips.

— Is that you? — she asked, smiling.
— Yes, — Mark answered, handing her a bouquet. — I've wanted to talk to you for a long time, but I didn't know how.

Homemade bouquet of sweetsAlice laughed:
— Marshmallow tulips — is the most original way I've ever seen.

Since then they have become inseparable. And the box of marshmallow tulips has become their little tradition — every year on the day of their first meeting, Mark gives Alice the same box, reminding her of how it all started.

Sometimes a small box of marshmallow tulips is enough to connect two hearts.

Do you know who you would like to give such tulips to?

Marshmallow tulips — are not just a dessert. This is a small miracle that can change everything.
